Abstract

Ikan merupakan produksi alam bagi masyarakat kelurahan desa Pondok Meja Kabupaten Muaro Jambi disamping hasil pertanian lainnya. Ikan adalah salah satu bahan makanan yang digemari dan dikonsumsi oleh masyarakat selain sebagai komoditi eksport. Ikan air tawar yang dihasilkan dapat dimanfaatkan untuk produk-produk bahan makanan yang berbahan dasar ikan seperti nugget ikan. Teknologi pengolahan nugget yang baik tanpa menggunakan bahan pengawet dapat dikonsumsi sebagai makanan ringan untuk semua kalangan dan mampu memanfaatkan produk ikan yang dihasilkan secara baik dengan meningkatkan citarasa dan nilai ekonomis dari produk. Teknologi pengolahan nugget ikan dengan standar dan spesifikasi bahan baku yang digunakan dalam keadaan segar, sesuai dengan teknik pencetakan, penggorengan serta pengemasan merupakan inovasi penting bagi pengusaha industri makanan agar menghasilkan nugget ikan yang bermutu dan disukai masyarakat. Pengabdian kepada masyarakat ini dilakukan dengan cara edukasi, penyuluhan dan demonstrasi berkala dan bertahap demontrasi dan evaluasi terhadap bahan baku, proses dan hasil akhir kepada ibu-ibu PKK di Desa Pondok Meja. Hasil Kegiatan Pengabdian kepada Masyarakat menunjukkan bahwa terjadi peningkatan pengetahuan dari peserta. Masyarakat terutama ibu-ibu PKK telah dapat membuat nugget ikan dengan hasil baik dan renyah, serta terampil dalam pengolahan nugget ini terutama cara menguleni fillet ikan, cara mengukus dan mencetak, cara batter dan cara menggoreng nugget tsb.

  1. Co-Authorship

This agreement can be terminated by the author or JKAM upon two months’ notice where the other party has materially breached this agreement and failed to remedy such breach within a month of being given the terminating party’s notice requesting such breach to be remedied. No breach or violation of this agreement will cause this agreement or any license granted in it to terminate automatically or affect the definition of JKAM. 

  1. Royalties

This agreement entitles the author to no royalties or other fees. To such extent as legally permissible, the author waives his or her right to collect royalties relative to the article in respect of any use of the article by JKAM or its sublicensee.

  1. Miscellaneous

JKAM will publish the article (or have it published) in the journal if the article’s editorial process is successfully completed and JKAM or its sublicensee has become obligated to have the article published. JKAM may conform the article to a style of punctuation, spelling, capitalization, referencing and usage that it deems appropriate. The author acknowledges that the article may be published so that it will be publicly accessible and such access will be free of charge for the readers.
